This remarkable whisky is crafted from locally sourced barley, hand-harvested in the vicinity of Dartmoor National Park.
After maturing in a single Bourbon cask, it achieves a refined smoothness enhanced by crystal-clear spring water drawn from Dartmoor. Housed in a 70-cl bottle with an ABV of 46%, Master Distiller Frank McHardy shares his thoughts on this outstanding spirit: “You’ll notice a beautiful golden colour typical of whiskies aged in Bourbon casks.
On the nose, expect inviting vanilla aromas, while the palate reveals delightful hints of toffee that evoke the flavours of crème brûlée and marshmallow. Overall, it presents a wonderfully sweet character with a nearly honey-like finish.
Ex-Oloroso Sherry Cask Single Malt
Introducing our exquisite Ex-Oloroso Sherry whisky, meticulously produced in a traditional copper pot still and aged solely in a single Ex-Oloroso Sherry cask, all while being complemented by the pure waters of Dartmoor Spring.
On the palate, you’ll encounter a charming blend of sweet sherry nuances, along with notes of hazelnut, coconut, marzipan, and sultanas, subtly accented by hints of gingerbread and treacle.
Our sherry casks, sourced from the prestigious Jerez region of Spain, are renowned for their exceptional quality, contributing rich and luscious flavours that truly enhance the whisky.
Ex-Bordeaux Red Wine Cask Single Malt
This whisky opens with inviting scents of ripe fruits and blackcurrants, leading to a palate filled with charming notes reminiscent of wine gum, enriched by hints of coconut and chocolate.
Matured in a single ex-Bordeaux cask, it finishes with a beautifully sweet and floral note that beckons you for another sip. The barley for this whisky is grown in the stunning Dartmoor National Park and is traditionally floor-milled in Warminster.
From there, it undergoes a transformation into a beer wash in Princetown before being distilled using our vintage 1966 alembic copper still, resulting in a spirit that is both smooth and sweet.

You can buy a cask of any of our core whisky experiences.
Every ingredient in our single malt whisky hails from the Southwest, and we proudly carry out all our production right here in the region. We place a high value on provenance, which is why we collaborate with local farmers cultivating barley in Dartmoor National Park and uphold the time-honoured practices of traditional malting houses like Warminster Maltings. Our beer wash is crafted according to Frank McHardy’s recipe by our partners at Dartmoor Brewery in Princetown.
After that, it’s distilled at our Bovey Tracey distillery, aged in cask, and blended with pristine Dartmoor water during both the barreling and bottling processes. We offer three main expressions: our original ex-Bordeaux Cask Single Malt, our American Oak ex-Bourbon Cask Single Malt, and our ex-Oloroso Sherry Cask Single Malt. Each one is meticulously produced at our distillery in the Old Town Hall, Bovey Tracey.
